Lazy Girl Latkes


I was not going to post these. I figured things out as I went along and it got a little messy. Then, I tasted my creation. Woah. Here's for all the lazy girls (and boys) out there. Happy Hanukkah!!

Lazy Girl Latkes
  • 1/2 a large onion, sliced thinly
  • Approx 2 cups frozen hash browns
  • salt
  • oil for frying
  • Fage 2% Greek yogurt for topping
Heat oil in a frying pan. Add onions and saute until they start to get soft.

Add hash browns. Mix them with the onions and then follow directions on the bag (spread thinly in either one large patty or several small "latkes"). When they brown on one side, flip. Season with salt.

Serve with Fage greek yogurt or applesauce. The yogurt is incredible, tangy, and WAY healthier than sour cream.

Mine kind of fell apart. That was kind of the plan. I served them in a bowl. Amazing.
